Seed Crackers with Cashew Cheese

Inspired by Mommypotamus’s Sesame & Sunflower Seed Crackers

These crackers are so easy and delicious, you’ll wonder why you ever bought a grain-based cracker.

  • 1/2 C pumpkin seeds {sprouted if you like}
  • 1/2 C sunflower seeds {sprouted if you like}
  • 1/2 C sesame seeds
  • 1/2 C flax seed (brown and golden are both great)
  • 1 t sea salt
  • 1/4 – 1/3 C water
  • Herbs, pepper, garlic, onion powder if desired

Preheat oven to 350 degrees. Blend pumpkin and sunflower seeds in the food processor into a flour. Add sesame seeds, flax seeds and salt and pulse to mix. Sprinkle in additional flavors if using. Add water slowly and pulse until your dough sticks together. Between sheets of parchment paper, roll out your dough to ~1/4 inch thick. Insert a cutting board under the bottom parchment paper and remove the top. Cut into squares with a pizza cutter or knife and slide the parchment paper onto a cookie sheet.
Bake for 15-20 minutes and let cool. Enjoy!
